Methods of Nutrient Addition in Fortified Rice: A Comprehensive Overview

Rice is the staple food for more than half of the global population, yet milled white rice loses most of its essential micronutrients during polishing. Rice fortification—the deliberate addition of vitamins and minerals to rice—has emerged as a cost-effective public health strategy to combat micronutrient deficiencies, particularly iron, zinc, vitamin A, and folic acid.
