Rice fortification\u2014the deliberate addition of vitamins and minerals to rice\u2014has emerged as a cost-effective public health strategy to combat micronutrient deficiencies, particularly iron, zinc, vitamin A, and folic acid. However, unlike flour fortification where powdered premix can be easily blended, rice is consumed as whole kernels, which complicates the fortification process and requires specialized technologies. The process begins with grinding broken rice\u2014typically low-value milled by-products\u2014into flour. This rice flour is then mixed with a vitamin-mineral premix (VMP) containing nutrients such as iron, folic acid, vitamin B12, zinc, and vitamin A. Proper mixing, achieved through convective, diffusive, shear, or hybrid mixing mechanisms, ensures uniform distribution of micronutrients throughout the flour. Water is added to the blend, and the resulting dough is passed through an extruder, which shapes it into grain-like kernels that visually resemble natural rice.<\/p>\n\n\n\n<p>Extrusion can be carried out as hot extrusion (70\u2013110\u00b0C), producing partially pre-cooked simulated rice kernels with sheen and transparency similar to regular rice, or cold extrusion (below 70\u00b0C), which yields uncooked, opaque kernels. After extrusion, the fortified kernels are dried, polished, and packaged. The extrusion process provides excellent nutrient stability and protection; certain nutrients are more stable in extruded rice than in other fortified forms. In this method, whole or head rice grains are sprayed with a liquid fortificant mix in large rotational drum or pan coating machines. The micronutrients are liquefied with waxes, gums, or edible polymers that help the nutrients adhere to the grain surface. Multiple layers of the coating may be applied to form a protective barrier. The coated kernels are then dried to yield fortified kernels.<\/p>\n\n\n\n<p>This technology concentrates micronutrients on the surface of the rice grains. When cooked, the coating dissolves, releasing and spreading the micronutrients throughout the cooked rice. Where rice is washed or soaked before cooking, coated fortified kernels must be rinse-resistant to ensure nutrient retention. The color and bulk density of coated fortified rice are similar to natural grains, which helps minimize segregation when blended with unfortified rice.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dusting Technology<\/h2>\n\n\n\n<p>Dusting is the simplest and most economical fortification method. It involves blending powdered micronutrient premix directly with polished rice grains. The fortificant particles adhere to the grain surface through electrostatic forces.<\/p>\n\n\n\n<p>However, dusting provides limited nutrient protection. Because the nutrients sit on the surface rather than being incorporated into the kernel, they are easily lost when rice is washed, soaked, or cooked in excess water. During parboiling, the paddy absorbs water through molecular and capillary absorption; subsequent steaming partially cooks the rice and enhances micronutrient movement from the bran into the grain. By adding deficient micronutrients\u2014such as zinc, iron, or folic acid\u2014to the soaking water, the parboiling process can significantly increase the nutrient content of rice.<\/p>\n\n\n\n<p>Soaking alone can also be used for fortification. Whole dehusked or milled rice kernels can be soaked in vitamin solutions at elevated temperatures, followed by oven drying. Ultrasonication-mediated fortification uses ultrasound treatment to enhance micronutrient loading and bioaccessibility. In a one-pot process integrating soaking and sonication, rice grains are subjected to ultrasound treatment while immersed in a fortificant solution. The ultrasound modifies the rice grain microstructure without causing macroscopic damage, facilitating deeper nutrient penetration. Studies have demonstrated dramatic increases in nutrient content\u2014up to 407-fold for iron, 61-fold for zinc, 413-fold for thiamine, and 8.4-fold for folic acid\u2014under optimized conditions. Ultrasonically fortified rice also shows high nutrient retention after washing and cooking and is suitable for long-term preservation.<\/p>\n\n\n\n<p>High-pressure processing (HPP) is another innovative approach. This technology uses high pressure to produce cold gelatinizing effects in starch, allowing rice grains to be impregnated with nutrients such as vitamin B1, calcium, and zinc. Agronomic biofortification uses mineral-enriched fertilizers to increase nutrient density in rice without modifying its genetic structure. Genetic engineering approaches, such as the development of &#8220;Golden Rice&#8221; enriched with \u03b2-carotene (provitamin A), have demonstrated the potential to enhance specific nutrient levels through targeted gene expression. More recently, researchers have increased iron content in rice endosperm by more than six-fold through the targeted expression of just two transgenes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Blending and Quality Considerations<\/h2>\n\n\n\n<p>Regardless of the technology used to create fortified kernels, the final step involves blending these kernels with non-fortified rice at specific ratios. Typical blending ratios range from 0.5% to 2% fortified kernels to regular rice\u2014equivalent to approximately 1:100 to 1:200. This two-step process ensures that even a small proportion of fortified kernels can deliver meaningful nutritional benefits to the final product.<\/p>\n\n\n\n<p>Quality assurance throughout the process is essential to ensure that standards are met and that the fortified rice effectively improves consumer nutritional health. Extrusion offers scalability and nutrient stability; coating preserves the natural rice kernel while adding a protective nutrient layer; dusting provides a low-cost option where washing practices permit; parboiling and soaking leverage traditional processing methods; and emerging technologies like ultrasonication and HPP open new possibilities for efficient nutrient incorporation. The choice of method depends on factors including scale of production, local cooking practices, regulatory requirements, and the specific micronutrients to be added.
